My little creation I call “smoothie pancakes” so easy and such a hit!! Store in fridge for easy mornings or freezer and reheat in microwave. 💓Idk if these exist already but what a fun outcome from experimenting with leftover ingredients.

Blend 1/2 cup strawberries, 1/4 cup blueberries, 1 banana, 1 egg, and 1 tsp vanilla extract or paste. Then add 1 tsp baking soda, 3/4 cup flour of choice (I used oat), a pinch of salt, and milk if needed to thin the batter. Cook in a skillet about 4 minutes each side on medium low!
