One of the easiest busy mom weeknight meals and SO SATISFYING! A simple sheet pan recipe with potatoes, sausage, peppers, onions, and eggs, topped with cheese.

What you need

fl oz sriracha

onion
potato

pepper

oz sharp cheddar

breakfast sausage patties

fl oz mayonnaise

Instructions
Preheat oven to 400 degrees Fahrenheit. Cook potatoes on a sheet pan, seasoned to taste, for 20 minutes or until slightly undercooked. Pull the sheet pan out of the oven. Add peppers, onions, pre-cooked sausage patties, and crack eggs on top. Season again. Put the sheet pan back in the oven for about 10 minutes or until your eggs are cooked to your liking. A minute before serving, add cheese (such as sharp cheddar and mozzarella) over top. Turn the broiler on high and watch closely, as it only takes about a minute. Pull out when bubbly and golden.
