Bloom gelatin (sheets in cold water 5 min or powder in ¼ cup cold water 5 min). Heat lychee juice (don’t boil). Remove from heat, whisk in gelatin until smooth. Stir in champagne and vodka. Pour into cups or a greased dish, chill 2–3 hrs until set. (Or 45 min fridge 30 ish minutes freezer to speed it up!) Optional: add a diced lychee to each cup before chilling, or top with decorative sprinkles!
